
There are some meals that immediately become part of the regular dinner rotation. Stuffed cabbage rolls are one of those dishes. They are warm, filling, tender, flavorful, and comforting, with soft cabbage leaves wrapped around a savory filling and baked until everything is beautifully cooked together.
This is the kind of homemade dinner that can make the kitchen smell wonderful while it is baking. The cabbage becomes tender, the filling stays juicy, and the sauce works its way into every layer. It is also a great meal for families because you can prepare a generous baking dish at once and have enough food for everyone.
The best part is that stuffed cabbage rolls may look complicated when you first see them, but the preparation is actually quite straightforward once you know a few simple tricks.
Ingredients
For the cabbage rolls
- 1 large green cabbage
- 500 g ground beef
- 1 cup uncooked white or long-grain rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
For the sauce
- 2 cups tomato sauce
- 1 cup crushed tomatoes
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- 1 teaspoon salt, or to taste
- 1 teaspoon sugar, optional, if the tomatoes are very acidic
- 1 cup water or beef broth
- 2 tablespoons olive oil
For finishing
- A little chopped fresh parsley
- Optional grated cheese for serving
- Extra black pepper to taste
Step 1: Prepare the Cabbage
The first step is to soften the cabbage leaves so that they become flexible enough to roll around the filling.
Fill a large pot with water and bring it to a boil.
Remove any damaged outer leaves from the cabbage. Carefully cut around the core at the bottom of the cabbage. This helps separate the leaves more easily as they soften.
Place the cabbage carefully into the boiling water.
After a few minutes, the outer leaves should begin to soften. Use kitchen tongs to carefully remove them one at a time.
Place each softened leaf on a plate or tray.
Continue cooking the cabbage and removing leaves until you have enough large leaves for the rolls.
Do not throw away the remaining cabbage. The smaller leaves and pieces can be chopped and placed underneath the rolls in the baking dish. They absorb the sauce and become incredibly flavorful.
Allow the cabbage leaves to cool enough to handle.
If some leaves have a very thick central vein, carefully trim or flatten the thickest part with a knife. This makes rolling much easier and prevents the cabbage from tearing.
Step 2: Prepare the Filling
While the cabbage is cooling, prepare the filling.
Place the ground beef in a large bowl.
Add the uncooked rice, chopped onion, minced garlic, egg, salt, black pepper, paprika, thyme, oregano, parsley, and olive oil.
Mix everything together thoroughly.
The rice will cook inside the cabbage rolls while they bake. It absorbs the juices from the meat and sauce, which helps create a tender and flavorful filling.
Do not overwork the mixture too much. Mix just until all the ingredients are evenly distributed.
If you prefer, you can replace some of the beef with ground pork or use ground turkey or chicken. The flavor will be slightly different, but the basic preparation remains the same.
Step 3: Make the Tomato Sauce
The sauce is extremely important because it keeps the cabbage rolls moist while they cook.
Heat olive oil in a saucepan over medium heat.
Add the chopped onion and cook for several minutes until it becomes soft and translucent.
Add the minced garlic and cook for about 30 seconds, stirring constantly.
Add the tomato paste and paprika.
Stir everything together and cook for another minute.
Then add the tomato sauce and crushed tomatoes.
Season with salt, black pepper, and oregano.
If the tomatoes taste particularly acidic, you can add a small amount of sugar. This is optional and should only be used if needed.
Add the water or beef broth and stir well.
Allow the sauce to simmer gently for approximately 10 minutes.
You do not need to make the sauce extremely thick at this stage. It will continue cooking in the oven and will become rich and flavorful as it combines with the juices from the cabbage and filling.
