Air Fryer Sliced Potatoes: Crispy, Golden and Ready in About 15 Minutes

If you love potatoes with crispy golden edges and a soft, tender center, these air fryer sliced potatoes are a recipe you will want to keep close. They are simple, inexpensive, flavorful, and require only a few basic ingredients.

The air fryer is especially useful for potatoes because it creates a beautifully browned exterior without requiring a large amount of oil. When the potato slices are seasoned properly and arranged correctly in the basket, they become golden and crisp on the outside while remaining soft and fluffy inside.

This recipe is perfect as a quick side dish for breakfast, lunch, or dinner. You can serve the potatoes alongside eggs, grilled chicken, steak, fish, burgers, roasted vegetables, or almost any other main course.

The best part is that you can change the seasoning according to your taste. Keep them simple with salt, pepper, and garlic, or add paprika, Italian herbs, chili flakes, or Parmesan for a richer flavor.

Ingredients

For approximately 4 servings, you will need:

  • 700–800 g small or medium potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon freshly chopped parsley, for finishing

Optional ingredients

You can also add:

  • ½ teaspoon Italian seasoning
  • A pinch of chili flakes
  • 2 tablespoons grated Parmesan cheese
  • A small amount of dried rosemary
  • A pinch of smoked paprika
  • Fresh garlic
  • A little lemon zest
  • Additional fresh herbs for serving

The recipe is flexible, so feel free to adjust the seasonings according to your preferences.

Step 1: Choose the Potatoes

The type of potato you use can make a difference.

Small or medium potatoes work particularly well because they can be sliced into attractive rounds without becoming too large.

You can use yellow potatoes, baby potatoes, red potatoes, or other varieties suitable for roasting.

If the potato skins are clean and thin, you do not necessarily need to peel them. Leaving the skin on can provide additional texture and helps the slices hold their shape.

Wash the potatoes thoroughly and remove any dirt.

If there are damaged areas or eyes, remove them before slicing.

Step 2: Slice the Potatoes

Cut the potatoes into slices approximately 1–1.5 cm thick.

Try to keep the slices relatively similar in size.

This is important because potatoes of different thicknesses will cook at different speeds.

Very thin slices may become crispy quickly, while very thick slices may still be firm in the center.

Uniform slices help everything finish cooking at approximately the same time.

You can cut the potatoes into rounds, half-moons, or thick wedges depending on the size and shape of your potatoes.

Step 3: Soak the Potatoes

For extra crispiness, place the sliced potatoes in a bowl of cold water.

Allow them to soak for approximately 15–20 minutes.

This helps remove some of the surface starch.

After soaking, drain the potatoes thoroughly.

Then pat them very dry using a clean kitchen towel or paper towels.

This step is extremely important.

If the potatoes are still wet when they go into the air fryer, they may steam rather than roast, making it more difficult to achieve the crispy exterior you want.

If you’re in a hurry, you can skip the soaking step, but drying the potatoes well is still important.
