What Is Konzo?
One of the most serious health problems associated with chronic exposure to cyanogenic cassava is a neurological condition called konzo.

During difficult periods, families may have less time, water, or resources available for proper cassava processing.
That can turn an important food-security crop into a significant health hazard.
Why Drought Can Increase the Risk
Environmental conditions can influence the cyanogenic content of cassava.

This creates a particularly difficult situation.

The “200 Deaths a Year” Claim

That figure should be treated cautiously.
There are documented cases of cassava-related cyanide poisoning and neurological disease, but I would not present “more than 200 deaths every year worldwide” as a current, firmly established global statistic without a specific source and year.
WHO has published research and estimates concerning the burden of cassava cyanide ingestion, and it has documented serious outbreaks and deaths.
However, the available global data are not precise enough to turn a viral headline into a definitive current annual death count.
The larger and well-established point is that improperly processed cassava can cause serious cyanide poisoning and has caused deaths.
Why “500 Million People Eat It” Is Also More Complicated
The image says that nearly 500 million people eat cassava.
FAO has indeed used estimates around 500 million people when describing cassava’s role as a basic staple, while other FAO publications have used different figures depending on the year, definition, and population being measured. (FAOHome)
This means the headline is based on a real idea but presents it more dramatically than the underlying statistics justify.
Cassava is undeniably consumed by enormous numbers of people.
And most people who consume properly prepared cassava do not experience cyanide poisoning.

One interesting thing about cassava is how many foods can be produced from it.

A granular cassava product widely consumed in West Africa.
Fufu
A starchy food prepared from processed cassava and other ingredients depending on the region.
Attiéké
A fermented cassava product especially associated with Côte d’Ivoire and neighboring areas.
Cassava flour
Used in various recipes and sometimes as an alternative to wheat flour.
Tapioca
Produced from cassava starch and used in foods around the world.
Fried cassava
Cassava can be cut into pieces and fried after appropriate preparation.
These foods demonstrate why cassava has such an important place in global food culture.
Can You Eat Raw Cassava?
This is where you should be particularly careful.
Raw cassava should not be treated like a raw carrot or potato that you can simply wash and eat.
Because cassava can contain cyanogenic glycosides, consuming raw or inadequately processed cassava can create a poisoning risk.
WHO specifically warns that large amounts of cassava can be fatal if eaten raw or inadequately prepared.
So don’t experiment with raw cassava simply because you’ve seen it described as a healthy root vegetable.
